Have you ever seen the fresh salmon caviars?
They appear on the shelves only this time
of the year, when
the salmon comes back to the river to lay
eggs.
This one I bought was sold at 790YEN(although
I bought it at
half price because I went to the grocery
very late at night).
790YEN is about seven US dollars for your
reference.
To my own surprise (really!), it was my first
time to
buy and cook the salmon caviars myself.
(I have often bought bottled, ready-made
stuff though)
I followed the indication written on the
package
and made some IKURA(soy sauce flavored caviars)
First, put the caviars in some salted water
and clean the surface.
Then soak the caviar in the very cold water
(so it won't go bad
while cooking by hands)
Remove the thin coating and splinter the
caviar one by one.
I thought each caviar was very fragile and
would be
difficult to splinter. But actually it was
not fragile and
the job was easily done.
Soak them in the {soy sauce + sweeten sake}
sauce.
Several hours later, it becomes "beautiful
red pearls" and
ready to be served over a bowl of cooked
white rice.
